Matchstick approaches this profile with the goal of seeking small-lot decaf offerings that are well suited to the espresso profile. As decaffeinated green fades very quickly, Matchstick buys in small quantities, as needed. The Swiss Water® plant is just down the road in Burnaby, BC and uses fresh, local, water to gently remove the caffeine until the green reaches 99.9% decaffeination.
